  • 1 block (14 oz) firm or extra-firm tofu, pressed and cubed
  • 3 cups cooked and chilled rice (preferably day-old)
  • 2 tbsp vegetable oil or sesame oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup mixed vegetables (peas, carrots, and bell peppers)
  • 3 tbsp soy sauce or tamari (for gluten-free option)
  • 1 tsp sesame oil (optional, for added flavor)
  • 1 tsp fresh ginger, minced (optional)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  • Prepare the Tofu: Press the tofu to remove excess moisture for about 30 minutes. Cut into small cubes.
  • Cook the Tofu: Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 6-8 minutes. Remove and set aside.
  • Sauté the Aromatics: In the same pan, add the remaining oil. Sauté the onion and garlic until fragrant and softened, about 2-3 minutes.
  • Cook the Vegetables: Add the mixed vegetables and stir-fry for another 3-4 minutes until tender.
  • Add the Rice: Increase the heat to high and add the cooked rice to the pan. Stir well to combine with the vegetables.
  • Season the Dish: Drizzle the soy sauce, sesame oil (if using), and ginger over the rice. Mix thoroughly and cook for 3-4 minutes, allowing the rice to absorb the flavors and lightly crisp.
  • Combine Everything: Add the cooked tofu back into the pan. Mix gently to combine all ingredients evenly. Taste and adjust seasoning with salt and pepper if needed.
  • Serve: Transfer the fried rice to a serving dish and garnish with sliced green onions. Serve hot.
