  • 1 cup bean sprouts
  • 1/2 cup mushrooms, finely chopped
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp black pepper
  • 12 egg roll wrappers
  • 2 tbsp vegetable oil (for brushing or frying)
  • Dipping sauce of choice (e.g., sweet chili sauce or soy sauce)

Instructions

  • Prepare the Filling:

    • Heat a large skillet or wok over medium heat. Add sesame oil.
    • Sauté onion, garlic, and ginger until fragrant, about 2 minutes.
    • Add cabbage, carrots, bean sprouts, and mushrooms. Cook until tender, about 5-6 minutes.
    • Stir in soy sauce and black pepper. Remove from heat and let the filling cool.
  • Assemble the Egg Rolls:

    • Lay an egg roll wrapper on a clean surface in a diamond shape.
    • Place 2-3 tablespoons of filling near the bottom corner.
    • Fold the bottom corner over the filling, then fold in the side corners. Roll tightly, sealing the edge with a small amount of water. Repeat with remaining wrappers and filling.
  • Cook the Egg Rolls:

    • Air Fryer: Preheat to 390°F. Brush egg rolls lightly with vegetable oil and cook for 8-10 minutes, turning halfway through.
    • Oven-Baked: Preheat to 425°F. Place egg rolls on a baking sheet lined with parchment paper. Brush with oil and bake for 15-20 minutes, flipping halfway.
    • Deep Fryer: Heat vegetable oil in a deep pan to 375°F. Fry egg rolls until golden brown, about 3-4 minutes. Drain on paper towels.
