- 12 egg roll wrappers

Instructions
Prepare the Filling:
- Heat a large skillet or wok over medium heat. Add sesame oil.
- Sauté onion, garlic, and ginger until fragrant, about 2 minutes.
- Add cabbage, carrots, bean sprouts, and mushrooms. Cook until tender, about 5-6 minutes.
- Stir in soy sauce and black pepper. Remove from heat and let the filling cool.
Assemble the Egg Rolls:
- Lay an egg roll wrapper on a clean surface in a diamond shape.
- Place 2-3 tablespoons of filling near the bottom corner.
- Fold the bottom corner over the filling, then fold in the side corners. Roll tightly, sealing the edge with a small amount of water. Repeat with remaining wrappers and filling.
Cook the Egg Rolls:
- Air Fryer: Preheat to 390°F. Brush egg rolls lightly with vegetable oil and cook for 8-10 minutes, turning halfway through.
- Oven-Baked: Preheat to 425°F. Place egg rolls on a baking sheet lined with parchment paper. Brush with oil and bake for 15-20 minutes, flipping halfway.
