Ingredients

Scale
  • 4 medium Russet or Yukon Gold potatoes, washed and peeled
  • 2 large yellow onions, sliced
  • 3 tablespoons vegetable oil or bacon grease
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • Fresh parsley for garnish (optional)

Instructions

  • Prepare the Potatoes:

    • Slice potatoes into 1/2-inch cubes or thin rounds for even cooking.
    • Rinse the potatoes under cold water and soak them in a bowl of cold water for 30 minutes to remove excess starch.
    • Drain and pat potatoes dry with paper towels.
  • Heat the Pan:

    • Heat oil or bacon grease in a large cast-iron skillet over medium-high heat. Ensure the oil is hot but not smoking.
  • Cook the Potatoes:

    • Add the potatoes to the skillet in a single layer. Cook for 5-7 minutes without stirring to let them brown.
    • Flip the potatoes gently with a spatula and cook for another 5-7 minutes, flipping occasionally until golden brown and crispy.
  • Add the Onions:

    • Add sliced onions to the skillet, stirring them gently into the potatoes.
    • Cook for an additional 5-7 minutes until onions are caramelized and potatoes are fully tender.
  • Season and Garnish:

    • Sprinkle with salt, pepper, and paprika (if using). Toss to combine.
    • Garnish with fresh parsley for a pop of color.
  • Serve:

    • Serve hot as a side dish or enjoy on its own.
