  • 68 flour or corn tortillas
  • 1 lb ground beef (or ground turkey for a lighter option)
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can refried beans (16 oz)
  • 2 cups shredded cheddar or Monterey Jack cheese
  • Optional toppings:
    • Sour cream
    • Diced avocado
    • Chopped fresh cilantro
    • Jalapeño slices

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with cooking spray.
  • Cook the Meat: In a skillet, brown the ground beef over medium heat. Once fully cooked, add the taco seasoning and a splash of water. Stir and simmer for 2-3 minutes.
  • Assemble Layers: Place a tortilla in the greased baking dish. Spread a thin layer of refried beans on the tortilla, followed by seasoned meat, a spoonful of salsa, and a sprinkle of cheese. Repeat the layers until all ingredients are used, finishing with a generous cheese layer on top.
  • Bake: Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and golden.
