- 1 large bunch fresh Swiss chard, cleaned and chopped (stems and leaves separated)
- 3 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 6 cups vegetable or chicken broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 2 medium potatoes, peeled and diced (optional for a creamier texture)
- 1 tsp dried thyme or 1 tbsp fresh thyme leaves
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- Wash and prepare the Swiss chard. Separate the stems from the leaves and chop both into bite-sized pieces.
- Heat olive oil in a large pot over medium heat. Add the onion and sauté until soft, about 3-4 minutes.
- Stir in the garlic and cook until fragrant, about 1 minute.
- Add the chopped Swiss chard stems and diced potatoes (if using). Cook for 5 minutes, stirring occasionally.
- Pour in the broth and bring to a boil. Lower the heat and let it simmer for 10 minutes or until the potatoes are tender.
- Add the Swiss chard leaves and cannellini beans. Simmer for another 5 minutes, or until the leaves are wilted and tender.
- Season with thyme, salt, and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese if desired.
